An Entrepreneur Exploration Roundtable featuring the science of beer with Abbey Brewing Company was held in August at the National Museum of Nuclear Science & History. Berkeley T. Merchant, General Manager of Abbey Brewing, shared Abbey’s unique entrepreneurial success story and the brewery’s origin in the remote mountains of Northern New Mexico. He described how a new species of hops, discovered on an Embudo, New Mexico hiking trail, can trace its genetic roots back to China and Manchuria and how it’s flavors enhance some of the Abbey Brewing Company’s craft beers. The session included a talk about the interactions between beer and food and how different mixtures of the same basic ingredients — hops, barley, yeast, and water — create the entire palette of beer flavors for all the 4,300 breweries now operating in the United States. Over 50 people attended the Roundtable.
